Loaded Potato Skins

A perfect party appetizer that is always a crowd pleaser. These are fairly traditional potato skins but before we had made them we didn’t know how easy it was.

Loaded Potato Skins



  • 6 small to medium russet potatoes
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 6-8 slices of bacon cooked and crumbled
  • salt and pepper to taste


  • sour cream
  • thinly chopped green onion



  1. Preheat oven to 400°
  2. Wash and dry potatoes then puncture with a fork all around each potato.
  3. Place potatoes in the oven for 45-60 minutes.
  4. Once cooked allow to cool for about 10 minutes.
  5. When the potatoes are cool enough to handle, cut them in half and remove most of the inside of the potato to resemble a little boat.
  6. Place the potato halves on a baking sheet. Layer in all the cheese, salt, pepper, and bacon.
  7. Set the oven to broil and carefully watch the potatoes. When they are nice and bubbly, remove them from the oven.
  8. Top with sour cream and green onion if desired.
