Loaded Potato Skins

A perfect party appetizer that is always a crowd pleaser. These are fairly traditional potato skins but before we had made them we didn’t know how easy it was.

Loaded Potato Skins
Ingredients
Ingredients:
- 6 small to medium russet potatoes
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 6-8 slices of bacon cooked and crumbled
- salt and pepper to taste
Garnish:
- sour cream
- thinly chopped green onion
Instructions
Instructions:
- Preheat oven to 400°
- Wash and dry potatoes then puncture with a fork all around each potato.
- Place potatoes in the oven for 45-60 minutes.
- Once cooked allow to cool for about 10 minutes.
- When the potatoes are cool enough to handle, cut them in half and remove most of the inside of the potato to resemble a little boat.
- Place the potato halves on a baking sheet. Layer in all the cheese, salt, pepper, and bacon.
- Set the oven to broil and carefully watch the potatoes. When they are nice and bubbly, remove them from the oven.
- Top with sour cream and green onion if desired.
