No Bake Date & Pecan Brownie Bites

This past weekend I made Cravings by Chrissy Teigen’s recipe for brownies and they were absolutely amazing! So much so that we were having trouble not eating the entire batch.
Now there was a time that I would have zero shame and go after every bit of those brownies. However, times have changed and so have I. So much so that I created my own recipe for a bit healthier version inspired by the Cravings recipe.

As luck would have it, I made the brownies because family was coming over for dinner and Mike’s brother brought over a ton of dates to share with us. We started talking about how they are used in RX bars and Lara bars and that sparked the idea.
These are a delicious, guilt free snack or dessert. The chocolate on the outside is completely optional but it does give it a little extra dessert feel.

No Bake Date & Pecan Brownie Bites
Equipment
- Food Processor
Ingredients
- 1 and 1/3 cup dates pitted and quartered
- 1 cup toasted pecans
- 1 tsp vanilla extract
- 3 1/2 tbsp cocoa powder
- 1/8 tsp salt
- 1 cup chocolate chips optional
- 3 tbsp unsalted butter optional
Instructions
- Combine all ingredients except the chocolate chips and butter into a food processor.
- Blend until well combined. The mixture should somewhat resemble course sand.
- Scoop a tablespoon of the mixture into your hand and form into a ball.
- Place all balls onto a parchment lined baking sheet and place in the freezer for 15 minutes to harden.
- (OPTIONAL) In a microwave safe bowl, place the chocolate chips and butter in it. Microwave for 1 minute and 30 seconds or until smooth. Let cool for 5 minutes, then gently dip half of the bite into chocolate and place back into the freezer for another 10 minutes.
