Oatmeal Banana Muffins


I don’t know about anyone else but I never buy bananas with the intention of making banana bread or muffins or anything. However, somehow I buy them and they turn brown and that is the only option I have left to do with them.

I love to make traditional banana bread but I wanted to make muffins because this quarantine has been portion control an issue in our household. Being stuck at home with Costco quantities has made things challenging. So to make them even a little more healthy for us, I used oatmeal in the recipe as well(although I did still add chocolate chips #balance).

Oatmeal Banana Muffins

Delicious homemade muffins made with fresh bananas, oatmeal, and optional chocolate chips.

  • 3 ripe bananas
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp salt
  • 1 1/2 cups dry oatmeal plus more for topping
  • 1 1/4 cups unbleached flour
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup chocolate chips optional


  • Preheat oven to 375 degrees.
  • In a large bowl, mash the bananas throughly.
  • Mix in egg, oil, vanilla extract, salt, cinnamon, and nutmeg.
  • Next, stir in sugar.
  • Once combined, add the oatmeal, flour, baking powder, and baking soda.
  • Stir until all ingredients are evenly combined. (add chocolate chips now if desired)
  • Line a muffin tin with paper or foil baking cups
  • Evenly distribute the batter into all 12 muffin cups and sprinkle extra oatmeal on top of each muffin.
  • Bake for 20 minutes and let cool before eating.
