Oatmeal Banana Muffins

Delicious homemade muffins made with fresh bananas, oatmeal, and optional chocolate chips.

Ingredients

  • 3 ripe bananas
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp salt
  • 1 1/2 cups dry oatmeal plus more for topping
  • 1 1/4 cups unbleached flour
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup chocolate chips optional

Instructions

  • Preheat oven to 375 degrees.
  • In a large bowl, mash the bananas throughly.
  • Mix in egg, oil, vanilla extract, salt, cinnamon, and nutmeg.
  • Next, stir in sugar.
  • Once combined, add the oatmeal, flour, baking powder, and baking soda.
  • Stir until all ingredients are evenly combined. (add chocolate chips now if desired)
  • Line a muffin tin with paper or foil baking cups
  • Evenly distribute the batter into all 12 muffin cups and sprinkle extra oatmeal on top of each muffin.
  • Bake for 20 minutes and let cool before eating.
