No Bake Date & Pecan Brownie Bites

  • Food Processor

Ingredients

  • 1 and 1/3 cup dates pitted and quartered
  • 1 cup toasted pecans
  • 1 tsp vanilla extract
  • 3 1/2 tbsp cocoa powder
  • 1/8 tsp salt
  • 1 cup chocolate chips optional
  • 3 tbsp unsalted butter optional

Instructions

  • Combine all ingredients except the chocolate chips and butter into a food processor.
  • Blend until well combined. The mixture should somewhat resemble course sand.
  • Scoop a tablespoon of the mixture into your hand and form into a ball.
  • Place all balls onto a parchment lined baking sheet and place in the freezer for 15 minutes to harden.
  • (OPTIONAL) In a microwave safe bowl, place the chocolate chips and butter in it. Microwave for 1 minute and 30 seconds or until smooth. Let cool for 5 minutes, then gently dip half of the bite into chocolate and place back into the freezer for another 10 minutes.
