Preheat oven to 400°
Wash and dry potatoes then puncture with a fork all around each potato.
Place potatoes in the oven for 45-60 minutes.
Once cooked allow to cool for about 10 minutes.
When the potatoes are cool enough to handle, cut them in half and remove most of the inside of the potato to resemble a little boat.
Place the potato halves on a baking sheet. Layer in all the cheese, salt, pepper, and bacon.
Set the oven to broil and carefully watch the potatoes. When they are nice and bubbly, remove them from the oven.
Top with sour cream and green onion if desired.
