Combine all ingredients except the chocolate chips and butter into a food processor.
Blend until well combined. The mixture should somewhat resemble course sand.
Scoop a tablespoon of the mixture into your hand and form into a ball.
Place all balls onto a parchment lined baking sheet and place in the freezer for 15 minutes to harden.
(OPTIONAL) In a microwave safe bowl, place the chocolate chips and butter in it. Microwave for 1 minute and 30 seconds or until smooth. Let cool for 5 minutes, then gently dip half of the bite into chocolate and place back into the freezer for another 10 minutes.
