Loaded Potato Skins

Ingredients

Ingredients:

  • 6 small to medium russet potatoes
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 6-8 slices of bacon cooked and crumbled
  • salt and pepper to taste

Garnish:

  • sour cream
  • thinly chopped green onion

Instructions

Instructions:

  • Preheat oven to 400°
  • Wash and dry potatoes then puncture with a fork all around each potato.
  • Place potatoes in the oven for 45-60 minutes.
  • Once cooked allow to cool for about 10 minutes.
  • When the potatoes are cool enough to handle, cut them in half and remove most of the inside of the potato to resemble a little boat.
  • Place the potato halves on a baking sheet. Layer in all the cheese, salt, pepper, and bacon.
  • Set the oven to broil and carefully watch the potatoes. When they are nice and bubbly, remove them from the oven.
  • Top with sour cream and green onion if desired.
